Kid-Approved Summer Snacks That are Healthy and Easy to Make

This year’s Summer Snack Recipe Guide has some great treats in it. Getting kids involved in cooking can help them learn how to measure, follow directions, improve hand coordination — and teach them about healthy cooking (an important life skill). For picky eaters, they are more likely to eat something that they helped prepare.

The Veggie Rainbow Wraps and Fruit Rainbow Wrap recipes are fun — because you are creating art with your food and the end result is something colorful with a variety of textures. When planning these snacks, let the kids help you select the fruits or vegetables of the different colors to incorporate in their rainbows. It can be fun to buy a fruit or vegetable that you’ve never tried before and see if you like it (like dragon fruit)!

We have included a fun, healthy dessert in the guide, the Chunky Monkey Banana Chocolate Ice Cream. There are lots of ways to create variations with your kids — let them be creative! While we don’t want to have desserts every night (maybe once or twice a week), this is a guilt-free option. Encourage your kids to choose “nature’s dessert” when they feel like something sweet, like a piece of fruit. Items like a smoothie or a yogurt parfait with fresh fruit and granola are other good healthy dessert choices. 

The last recipe in the guide is Chocolate Chip Pumpkin Muffins. I like making them mini-muffin size, as this is a great snack size (but note that it will lessen your baking time). Pumpkin is nutrient dense, providing Vitamin A and antioxidants to boost your immune system. We have reduced the amount of sugar (and I use stevia instead of refined sugar), as well as substituting applesauce for the typical oil you might find in a muffin.
